Although Bolognesi , traditionally accustomed to pasta , we wanted to emphasize even products without egg recovering classical themes of some Italian regions such as the " Orecchiette " Puglia , the " macaroni iron " of Calabria , Trofie traditional Ligurian … etc So we've tried groats best suited to bring together workability , elasticity and resistance in cooking , elements essential to the quality and good taste of the pasta as well as nourishment.
